Hearty Tasty Dish for all ocassions

Ingredients

4-6 Lamb Shanks

2 12 0z bottle of favorite beer

Salt , Cajun seasoning

1 can chopped tomatoes and juice

Black Pepper, 4tbs Flour

1 cup of chicken broth

2 Tbsp Olive Oil

4 med potatoes diced

4 Garlic Cloves

1lb bag of baby carrots

1 Red Onion Chopped

2 bay leaves and a sprig of thyme

Season Lamb with salt and pepper and cajun seasoning then roll in flour. Heat Olive Oil in large frying pan. Fry chops on both sizes until brown 15mins Place in a 13 x 9-inch baking dish, set aside. In the frying pan saute' onions, garlic,3 mins,add carrots, potatoes,8mins untl brown. Stir in beer,tomatoes/juice,chicken broth, bay leaves and thyme. Bring to boil 3-5 mins. Pour mixture over Lamb. Bake covered in 375 oven for 2 1/2hours. Serve with French Bread or Corn Bread
